Vineyards found on South Africa’s Western Cape have largely been converted from old apple orchards. The climate here is warm and sunny, which means grapes have no trouble tapping into a juicy assortment of tropical fruit flavors. Cool breezes from the Atlantic and Indian oceans mediate temperatures and help to conserve refreshing acidity. These grapes were harvested twice, each time at a varying stage of ripeness.
